We want to have a Firefly/Serenity-themed party this summer, and I thought about making some granola bars as "Fruity Oaty Bars". For the uninitiated who may stumble across this journal somehow, here's what I mean:



I'll have to give these a shot and see if they're good. Maybe I can color the coconut or something to make them more brightly colored?



Chewy Granola Bites

2 cups old fashioned rolled oats
1 cup chopped or sliced almonds (I used about 1/4 cup sliced and 3/4 cup chopped)
1/2 cup chopped walnuts
2/3 cup honey
1/4 cup light corn syrup
1/4 cup light or dark packed brown sugar
2 tablespoons unsalted butter, room temperature
2 teaspoons vanilla extract (I think that I would like to try 1 teaspoon vanilla and 1 teaspoon almond extract next time)
1/2 teaspoon kosher salt
1/2 cup unsalted roasted sunflower seed kernels
1/2 cup ground flaxseed
1 cup orange-flavored dried cranberries (or regular dried cranberries)
1/4 cup golden or regular raisins (I used the jumbo kind and they were great because of how chewy and “meaty” they were)
1 cup sweetened shredded coconut
1/2 M&Ms

1. Preheat the oven to 350 degrees F. Line a 9×13 inch baking dish with foil (this allows you to lift the bars out and cut them with ease when they’re cooled) and spray with Pam. Set aside.

2. Spread the oats, walnuts, and almonds out on a baking sheet and toast them in the oven for 8 minutes, remove and stir them a bit to ensure even toasting, and toast for another 8 minutes. Remove them from the oven, set them aside, and reduce the temperature to 300 degrees F.

3. While the oats and nuts toast, combine the honey, corn syrup, brown sugar, butter, vanilla, and salt in a small sauce pan. Heat it over medium-low heat until the butter and brown sugar are melted and the sugar has fully dissolved, then set aside to cool for a bit.

4. In a large mixing bowl, combine the sunflower seed kernels, flaxseed, cranberries, raisins, M&Ms, and coconut. Add the toasted oats and almonds and toss to make sure everything is evenly combined. Pour the honey mixture into the bowl, and stir until all of the dry ingredients are coated in the honey mixture. Transfer to the prepared baking dish, spreading the mixture evenly and pressing down with your fingers or with a greased spatula, depending on how how the bars are.

5. Bake in the 300 degree F oven for 20-25 minutes, until slightly more golden. Allow to cool COMPLETELY (seriously, they will far apart if they haven’t cooled 100% – this may take a few hours) before slicing into bars or “bites”. Makes 16-20 bars or 32-36 bites.
