Rainbow Rice Krispies with measurements

Originally found here

I think this would be a really fun addition to the pride parade/BBQ afterward. I'm not big on Rice Krispies but everyone else seems to be.

This makes a huge rainbow measuring approximately 26 inches wide x 17 inches tall. If you want a smaller rainbow, you could cut the amounts below in half, although I advise against making a batch smaller than the purple one below. It would be very easy to burn the butter & marshmallows with such a small amount in the pan. But you could make the amount below for purple then only use half of it when forming your rainbow. Then you have something to nibble on!

Red: 6.5 cups cereal, 10 ounces marshmallows, 3 tablespoons butter
Orange: 5.5 cups cereal, 8 ounces marshmallows, 2.5 tablespoons butter
Yellow: 4.5 cups cereal, 6.5 ounces marshmallows, 2 tablespoons butter
Green: 3.5 cups cereal, 5 ounces marshmallows, 1.5 tablespoons butter
Blue: 2.5 cups cereal, 3.3 ounces marshmallows, 1 tablespoon butter
Purple: 1.5 cups cereal, 1.6 ounces marshmallows, 1/2 tablespoon butter

Melt the butter over very low heat, add marshmallows, stir until melted. Stir in small amounts of food coloring until you get the color you want. I used Wilton gel icing coloring, dipped a toothpick in the gel & stirred it into the marshmallow/butter mixture. My "red" turned out more like Pepto Bismol pink, but I kept it that way to be consistent with the intensity of the other colors. Turn off heat, add Rice Krispies, stir well.

I started with purple. I used a well-buttered jelly roll pan to form the rice krispie treats against the side to make a long strip. Then I bent the strip of RK treat into an arch. Then I continued with blue, used the jelly roll pan again to make a longer strip of blue and formed it around the purple. And so forth. It helps to have well-buttered hands while doing this.

Also, to prevent from having to wash the pans too many times, I actually started with blue, then did the purple next. Put that pan in to soak, did blue then green, put that pan in to soak, washed the first pan, then did red then orange.

Enjoy!
